Meet Inés Rosales

Since 1910, the iconic tortas de aceite from Inés Rosales have been handcrafted, one by one, in a small bakery on the outskirts of Seville.

This bakery is located in the heart of Castilleja de la Cuesta, a charming village in the province of Seville, known for its rich pastry tradition and its deep Andalusian heritage.

The story of these tortas begins with a visionary woman: Inés Rosales Cabello. At a time when few women led businesses, she began making her tortas using a rescued family recipe and selling them at the local train station.

With perseverance and a commitment to authentic flavor, she turned her name into a symbol of quality and tradition. Today, more than a century later, they remain Spain’s favorite tortas—an artisanal treasure found on tables around the world.
